In my family, we used to call it “end bread”, and we used to fight over those pieces. I had no idea other people didn’t like it until we went to a fancy restaurant one day.
I was about 8 years old and the waiter came to me with the bread basket and offered me to take a piece. I started reaching for the end piece and he says “that’s the heel”. I continue to reach for it and he says forcefully “that’s the heel, you don’t eat that.” I looked at my mom quizzically and she just shrugged. It was at that moment I realized that our family was doing something shameful and that we shouldn’t tell other people about it. So I grabbed another piece of bread, one of the middle slices, and tried not to think about how they were just going to waste the “heel” and throw it out. I also never told anybody else ever again that I enjoyed eating the end piece.

I do recognize "heel" as a technical term for it, but I would never actually say that myself, and I don't think I've heard my family and friends say it either.

We used to call it the "Daddy Piece" -- it was my dad's 'favorite' piece, so as little kids my brother and I always wanted to get it instead.
It was not his favorite piece. We were fooled. He pretended to like it so we would want it and he wouldn't get stuck with it ! I've never learned the real name, but in public I call it the "end piece"

My mother grew up during the Great Depression. She hated the heels. Her mom, (my grandmother) told her that if she ate the heels, it would make her hair curly, just like Shirley Temple's hair. Mom desperately wanted curly hair, so she ate the heels.
