Please do not learn English from Adventure time lol. Totes is a pretty normal (if informal/juvenile) word to use, but a lot of the things they say in that show are 100% nonsensical and will confuse native speakers.

"Totes" means "totally." This is relatively recent, but it's now fairly common in informal speech and social media.
"We should totes" and "we should totally" are both **very** informal speech, as in the type of speech used by teenagers. (Frankly, I see "totes" more among adults mimicking teenage speech than among teenagers.) Don't use "totes" in formal/work settings, and don't use "totally" like that either. Just say "we should..."

You've got the answer to your specific question, but just to elaborate. Some one-syllable slang words are basically just shortened forms of regular words.
Another example would be "def", short for "definitely", like "we should def get some pizza".
If you can try to swap out words that start with that syllable that fit the context, you can sometimes figure out what they mean.
