Bitter. The word is bitter.
Bitter does not mean bad tasting. There are a lot of delicious foods that are bitter. Please take the snob comments to r/coffee we're here to help people learn basic English.

Either bitter or acrid. Acrid is more accurate to specifically how coffee tastes, but it has an even more negative connotation than bitter does. Acrid means "this smells like it's gonna taste like poison"

People have said "bitter," which is 100% accurate if we are talking about good coffee. If you get a cup of really cheap, bad coffee, then without cream or sugar the taste could also be described as "acrid."

Bitter, other bitter things similar can be blood oranges or unripe fruit.

Almost all coffees which you can purchase would have a predominant flavour best described by the term “bitter” (especially without milk or sugar to offset this flavour). This is true of all dark and medium roasted coffees and, therefore, almost all brewed coffee available in the general marketplace.
If you specifically refer to lightly roasted speciality coffees then sour flavours may dominate over bitter ones. Or, the flavour may be complex and balanced and not really easily be described by any of the five principal flavour profiles usually mentioned in English.

"bitter" is the most common word. But, if you wanted to describe it more categorically, or even poetically, you could call it "earthy" which doesn't have a specific meaning, but refers to a flavor quality shared by many rustic items, like: potatoes and other root vegetables, black pepper, whiskey, leather(not that you should be eating leather,) and tobacco(not that you should be eating tobacco.)

It's basically sour but just a bit. Bitter if that's a bad overextracted coffee. And, well, the main description of coffee flavour is that it's just... Coffee flavour.
The main thing that forms basic coffee taste is the acidity. But not all the acids are "sour" per se, it's too strong of a word to use for coffee.

Bold or earthy. Those saying bitter or sour are probably not drinking very good coffee (sorry but it’s true).
